A COMPREHENSIVE STUDY OF PLANT PROTEIN MODIFICATION TECHNOLOGIES EMPLOYING INTELLIGENT DATA ANALYSIS
Abstract
The aim of this study was to conduct a comprehensive review of existing technologies for the extraction and modification of protein components from plant resources using intelligent analysis methods. Despite the proven advantages of plant proteins, their application is limited by several factors, including an imbalanced amino acid composition, high allergenicity, a significant concentration of antinutritional factors, low digestibility, and poor functional and technological properties. To mitigate these negative effects, various approaches are employed to modify the structure and properties of proteins. An intelligent analysis of research in this field, conducted on the ScienceDirect platform using the query “Plant Proteins”, retrieved 340,400 publications. The most active scientific research in this area is carried out in China and the USA, with an annual increase in the number of publications observed. The most highly ranked articles in this domain received from 187 to 644 citations. The authors demonstrated the feasibility of modifying the structure and functional-technological properties of plant proteins using various methods, including enzymatic hydrolysis and ultrasonic treatment. The primary objective in the search for new technologies is to enhance bioavailability while minimizing proteolysis and changes to the native structure of protein fractions during processing. Complex processing technology of plant bioresources, involving a combination of non-thermal treatment methods with the application of pH shifting or enzymatic hydrolysis, is recommended as a highly effective technology. This approach allows for the targeted regulation of the technological properties and functionality of protein components. Hemp seed protein is distinguished by its balanced amino acid composition, high bioavailability, and bioactive properties. Consequently, a comprehensive analysis of existing technologies and the development of new methods for the extraction and regulation of the technological and functional properties of this protein represent a crucial task for the modern economy.
